Reducing the cadmium, inorganic arsenic and dimethylarsinic acid content of rice through food-safe chemical cooking pre-treatment

Cadmium, inorganic arsenic and, potentially, dimethyl acid are carcinogens widely elevated in rice. Here it was identified that the food-safe and common cadmium chelator citric efficiently removed from intact grain via pre-soaking procedure, while also reducing species. A twostep stage developed whereby rice first incubated, at ambient temperature, 1 M for 12 h, then calcium carbonate another latter step to neutralize pH, followed by cooking. When 10 different individual types of were processed such a way this resulted removal rates 79% cadmium, 81% 66% DMA. The technology is particularly suitable bulk food processing could be deployed most impacted regions where staple.
